Vegan bacon

Ingredients

  • 220g yuba or scraped, brown banana skins
  • 120g soya sauce
  • 15g nutritional yeast
  • 2 tbsp maple syrup
  • ½ tsp liquid smoke

Method

  1. For yuba, stack 2-3 layers thick, cut into strips 1 inch wide.
  2. Combine other ingredients in shallow dish, add yuba/banana skin strips, mix well, marinate minimum 30 minutes.
  3. Fry both sides until crispy.

Stores 3-4 days in fridge, 6 months in freezer.
